The dishes at his restaurants Josselins Tapas Bar and Grill at The Shops at Kukuiula, and JO2 Natural Cuisine in Kapaa reflect the Islands tropical melting pot. Josselin is, in fact, one of the pioneers of Pacific Rim cuisine.
